What is Bologna?

Bologna, the capital city of the Emilia-Romagna region, in northern Italy. American Bologna is similar to the Italian deli meat, mortadella, which originated in the Italian city of Bologna

How is it made?

Bologna is a cooked, smoked sausage made of cured beef, cured pork or a mixture of the two. Our bologna is made from what's called "trim meat". Yes, its what's leftover, but so is anything in a sausage casing like summer sausage, ground pork and even breakfast sausage patties or links are made from trim meat.  After the butcher takes out the primary muscles like Pork Chops, Tenderloins, Pork Butts, Hams, etc. there is still a lot of meat on the animal that needs to be trimmed away from the fat and can be used for all kinds of sausages.

What do I do with it?

We love putting it on a charcuterie platter, in the kid's lunches, sliced and seared/fried and dipped in mustard, put on a sandwich, topped with pimento cheese and a pickle... trust me! It's not nearly as scary as the childhood meat you once enjoyed.... it's better!

Do you make it yourself?
No! In order for us to sell meat to consumers (especially across state lines), we have to have our animals processed at a certified USDA facility. All of our sausages and meats are cut by the butcher after they are inspected and packaged by them. I approve all the ingredients and curing methods, but do all of the cutting, curing, and packaging.
Does it taste like the famous store-bought with it's own jingle?
It tastes better. Much better. Period.
I'm not sure what is actually in their bologna. But I know ours is filled with Pastured Pork from our farm, Water, Salt, Tapioca Starch, Paprika, Raw Sugar, Celery Juice Powder, and Dehydrated Garlic.

Hillbilly Nutrition's Bologna Appetizer

Ingredients:

  • 1 ring of Hillbilly Nutrition Bologna
  • 1 pint of your favorite Pimento Cheese. I have yet to make my own but I hear it's super easy. We buy a delicious deli made tub at HEB.
  • 1 jar of your favorite sour pickles.

    Instructions:

    STEP ONE

    Take the casing off of the ring bologna and slice in thick rounds.

    STEP TWO

    Top with a dollop of your favorite pimento cheese.

    STEP THREE

    Slice your pickles into bite-sized chunks and place on top of pimento cheese.

    STEP FOUR

    Devour!
