The Hillbilly Country Club Box has was born in 2020 as a way to share our meats with you monthly. We've got a small and a medium option shipping roughly 6lbs or 14lbs respectively and will be a combination of our ground meats, sausages, roasts, chops, and of course bacon, as inventory allows.
Having farm fresh meat shipped to your door will give you what you need so you can shop your freezer each week, selecting something that you can easily get on the dinner table. We love having an assortment of pastured and grass-fed meats in our freezer to choose from every time we are looking for inspiration.
Processed at a USDA Inspected Facility which gives us the capability to ship meat directly to you. All Pork and Lamb are Pasture Raised on our farm in Waxahachie, Texas. Beef is Grass-Fed, Grass-Finished at our Sister Farm in Malone, Texas.
Some ideas for your dinner table:
(I'll be linking to our recipes as they roll out this year)
Taco Al Pastor - a sweet and peppery blend of pineapple and chili spices. Check out our recipe on the blog! Our Pastured Pork is not shy on flavor but when you include all the fun toppings and your tastebuds will thank you.
Hamburger Salad - We love making the Trifecta burger (a blend of everything but the bun! Just stack on the lettuce, pickles, onion, tomatoes, mustard, mayo, mushrooms, and bacon and you are SURE to take care of that hankering!
Lamb Bowls - Lamb is so versatile, can almost be replaced for beef. But we enjoy pulling our Moroccan spices like Ras Al Hanout to flavor up some vegetables and spice of some ground lamb. Paired with cucumber, tomatoes, parsley, a good olive oil, some kalamata olives, pickled onions, turmeric rice... I could keep going. These bowls make my taste buds so happy!
BLTA - Bacon Lettuce Tomato Avocado... or EGG!
Chili - we like a variety of beef and ground pork in our chili (recipe inspired by Don Henley's chili recipe.... helo Frito Pie! Here's our Recipe on the Blog
Pozole - with shredded pork, green style... simply delicious!
