The Hillbilly Country Club Box was born in 2020 as a way to share our meats with you monthly. Varying in size, each box will consist of our pastured ground pork, sausages, breakfast meats, roasts, shoulders, chops, and bacon. The larger boxes will include some chicken drum sticks and thighs, beef roasts, or ground beef as noted below.

The 7lb Small box is great for 1-2 people for the month (100% pork)
The 10lb VALUE box is suggested for 2-4 people for the month (can include chicken drumsticks, thighs, and ground beef on occasion)
The 14lb Family box will feed approximately 4-6 people for the month (can include chicken drumsticks, thighs, ground beef, or a beef roast on occassion)
The 17-18lb Family + Premium Steaks is everything the 14lb Family Box includes + 4 pounds of premium grass-fed, grass-finished steaks
Our pork is known for its meatiness, well-marbled, flavor. Our pigs are raised outdoors and fed grass, a Non-GMO Soy-Free Corn-Free feed, and lots of sunshine ensuring that their bacon is some of the best you've ever eaten. We raise a heritage breed of hogs called Red Wattle's that you can read more about here. Your pork will have never received any hormones, antibiotics, or vaccines.
Originating in Texas, they are known in the chef community as a breed raised for flavor but the home chefs, bbq'er, and local connoisseurs all rave about them making a delicious cut of meat that can't be replicated in conventional pigs.
All meat is shipped hard frozen on dry ice. Each package is vacuum-sealed and can be defrosted in your fridge or in some cold water for a quicker thaw. The USDA recommends cooking pork to 160 degrees, but for quality raised pork like this, you are best taking it off the heat at around 150-155 and letting it rest. This will produce a medium cooked juicy cut of meat that isn't just "the other white meat".
Grass-Fed Grass-Finished Beef
Our grass-fed, grass-finished beef is raised by Out Home Farms in Teague, Texas. Farmer Ross cares for his heard daily ensuring they are rotated to fresh grass throughout their days on pasture that is untouched by chemicals, fertilizers, or herbicides. Grass-fed, grass-finished beef, raised in Texas and processed at a local USDA processor. 14 Day dry-aged and never any hormones or antibiotics, just lots of grass and sunshine!

Our pastured chicken is raised by Jr Mints Farms in Vernon, Texas. The chickens are supplemented with a NonGMO Soy Free Corn Free feed freshly milled in Muenster, Texas. Raised on pasture our chicken also forages on grass and bugs as all chickens should. They are moved daily in their chicken tractor and never receive any hormones or antibiotics. All-natural, better than organic, pastured chicken.
