1 5lb package of pork fat to be rendered or used in your own venison sausage
Place in a dutch oven or heavy saucepan and place heat on low with the lid on. Once all fat has liquified there will be some floaty bits you can scoop out with a colander and continue to fry (pork rinds!!) Strain the rest of the liquid fat through a coffee filter or cheesecloth into a mason jar and let cool. This will render dowm to approximately 3-4 mason jars of white lard ready to use for cooking or baking. It's some of the cleanest "oil" you can find. Trust me!
